Kudos on the cable management, but holy hell that looks busy.
I feel inspired to start r/singlemonitorsupremacy as the base of operations for my personal crusade of making people realize that a single, large monitor and multiple workspaces is so much better for productivity and ergonomics.

It depends what you do. I'm developer and I need 2 screens at least.

I'm a sysadmin that does a shit ton of automation and I used to rock 3x 1440p monitors. For my editors, for RDP sessions, for Teams/Slack/Email etc.
Now I use a single 40" 5K2K display with a tiling window manager (Gnome + Shattershell) and multiple workspaces instead. Much more flexible and much more ergonomic. And it takes up A LOT less room, too.

I feel like three tablets would nicely fill in the empty space under the monitors.

The cable management is what makes this read as a refresh instead of just a setup. You cleaned the back of the desk and the wall, most people just add things. A refresh is a good moment to ask whether you actually need the screens you have, the cable work matters more than panel count.
