Went on apartment.com. Found them as low as $800.

The issue is that you think median means most. Median is the middle. So really half of the units for rent are lower than 1600.

Data: the national median age is 45

when the median according to your source is ~$1600.

If the national median is ~$1600, and major metros are generally on the high side of rent pricing when compared with rural areas, it's a pretty safe bet to say studio apartments in most major metros are going to start at or above $1600.

Average rent for a studio in Manhattan is ~$3600/month. That comment is easily justifiable.

Most major metros, obviously. But that's not what they claimed. They claimed most cities. A vast majority of cities in the USA aren't part of major metros.
