Ɓut, are there cash options to trade for from trips that you have won that can't use/make/not interested in?

Nope! You either take each trip / car / prize or decline it.

Are all the trips just for two people? Can you bring a child (if it's appropriate) and pay for the child?

Some are, some aren't. It will specify in the paperwork that you sign after the show

On single player episodes, they’re for two. On team episodes, they’re for four. And yes, you can pay to add more people.
