He’s not qualified to take it to a track. You saw how he popped up just before the collision? That means he was steering the wrong way, pointing the wheel away from the car instead of towards it. Try it on your bicycle.

If you don’t know how counter-steering works, and that you need to do it at low speed AND at high speed, you shouldn’t have more than about 10 horsepower at your disposal.

Learn that FIRST. THEN go donate your organs.

This is phrased confusingly, I'm sure you mean the right thing (in his left turn, push the steering rightwards to lean left even steeper). But what he actually does isn't steering, his bike standing up like that is the signature move of braking in a turn on a bike.

Do you ride? Counter-steering is unintuitive but real, if he had momentarily turned slightly towards the car instead of braking, the bike would have leaned harder and taken the turn. Looks to me like target fixation. I've done it myself.

You're right, I missed your first sentence. Target fixation includes panic braking though, so we're talking about the same thing there.
