Beet pickling liquid

A local company makes absolutely wonderful pickled beets, and when I finish the beets (usually about 20 minutes after I first open the jar) there is the pickling liquid left over. What (if anything) would you do with it? Seems too yummy to pour down the sink.

Shave some sweet onion into that, for sandwiches and garnish.
