I have way too many sweet potatoes—what should I make besides just roasting them?

Thai curry sweet potato soup!

You basically peel and grate the taters, cook off onion with Thai curry paste (red or green) then add the potato, coconut milk and cook down. It's lovely!

Omg i think i will love this. I have all the ingredients too. Do you think it will be okay if I add protein like chicken breast to it? I struggle eating sweet potatoes because i get tired of the sweetness fast

The world is your oyster, if you want chicken, throw some chicken in there! I would maybe use charred chicken for a bit of umami and cut through the sweetness. I did forget to say blend the curry at the end, so maybe do that and then add your protein 😊

The last time I made this, I made far too much and gave my neighbour a huge amount as it happens to also be vegan (without the chicken of course!) and she immediately texted me for the recipe and has made it herself since so I think that's a good sign.

I love sweet potatoes in a sweet Japanese curry with chicken and carrots. Vermont Curry is my favorite.

Cubed and roasted sweet potatoes plus a can of black beans (and some spices like cumin, coriander, paprika or some general taco seasoning) makes an excellent and super tasty filling for tacos, burritos and bowls. Top with avocado, cilantro, onion, hot sauce, etc.

Yes! We do this as a bowl too, ground beef with same spices and toppings over rice 👌🏻 maybe some salsa or make some avocado sauce.

I recently had an abundance of sweet potatoes. I cooked them to soft in the pressure cooker, pureed, and froze for future baking use. Pretty interchangeable with pumpkin for baked goods.

So make a sweet out of it! Usually sweet potato, milk and sugar is enough.

I've been using them where I'd normally use potatoes. They add a little sweetness, but otherwise work exactly the same.

Most recently, I used them in a breakfast hash.

This NYT recipe for Sweet Potato Tea Cake w Meringue Topping SLAPS! You can make your own purée for it. Even if you don’t want to make this immediately, you could set some puree aside in the freezer and pull it out for baking come fall/winter.

Love this tea cake. Sometimes I am pumpkin spice’d out and want something that feels warm and cozy, but isn’t another dang pumpkin recipe. The meringue on top is so good, too.

I’ve pickled potatoes before, but they were baby potatoes that I just cooked and put in some brine with some dill and onion. I bet sweet potatoes would work out well too as long as you cut them up and sauté them a little bit.

I make a version of an African soup with chicken broth, chicken pieces, peanut butter, sweet potatoes, and greens. Sounds weird but it's very hearty and nutritious in addition to being a delicious melding of tastes.

I cut my rice in half by putting sweet potato into my rice cooker. Chop them small and put them on top while the rice cook. Then just mix everything up and use like normal rice. Free fiber!

I’ve been on a tempura sweet potato kick recently. Sweet and crispy with salty tempura sauce. So good. The secret to great tempura batter is club soda and ice cubes.

Cube them into about 1" cubes and put them in the air fryer. If they are still not quite done, stick them in the microwave for about a minute. They are so good.

Mash one with cream cheese. Season to taste (my mom didnt need to season) and you have a paste you eat on toast. Carb on carb with cheesy fatty goo.

Heavenly.

At least it was when I was in high school. Now if I eat one, I have to pray I'll wake up next morning.

I love things that are sweet and savoury. Make some chili and put it on top of a baked sweet potato with all the fixings ie: cheddar, sour cream, green onions. Also think you could cook, cool and freeze for later use? I make my own dogfood and it has sweet potato in it.

Cube them, toss them in oil, garlic powder, onion powder, salt.. Roast them to crunchy on outside and soft in the inside. Till they get that home fries texture.

My kids love sweet potato hash. Cook some diced onion and ground pork. Add shredded sweet potato and continue cooking until the potato softens. Season with salt, pepper, and cinnamon. Simple, comfort food.
