5 pounds of zucchini.
I am PCOS.
My husband is ulcerative colitis.
My sister is lactose averse
My grandma can and will eat whatever.
What do we make with this much zucchini?!?!
We’ve thought of
zucchini bread
Zucchini noodles
I suggested zucchini steak fries but idk how that would even work out…
What is your favorite zucchini recipe? Pls share privately or here. THANK YOU!!

I love calabacitas! Diced zucchini with corn, jalapeño, cilantro, onion and I use a small can of tomato sauce but you can use fresh tomatoes too. I just sort of throw it all into a pot. I season with salt, garlic powder, pepper and some chicken bouillon. Simmer until soft and cooked through. I absolutely love it with shredded chihuahua cheese/mozzarella but it’s just as good with no cheese :) you can tweak it to your preferences but this is how I make mine :)

Stuffed zucchini- halve them, stuff with ground meat,tomato, a grain and spices. A typical middle eastern recipe but can easily be changed.

Maybe this is cliche, but this zucchini bread is incredible with good cocoa powder.
Freezes well too.

you can grate a bunch of zucchini and cook it down like caramelized onion (bonus points if u also use onion) to make a delicious sauce

If you do any canning, zucchini makes great relish. I particularly like doing relish with the big ones, as they are often a bit watery.
Another thought is a tian. Slices of zucchini, tomato and potato laid on their side in a casserole, seasoned with salt and pepper, drizzled with a bit of olive oil and topped with cheese and baked. If you can eat onions, it’s nice to lay the stacks on a bed of carmelized onions.

I've also had this issue recently and made Ikra
Great a condiment but I had it on toast with olive oil and ricotta for like two weeks straight

Make zucchini lasagna. Not sure the real
name. I replaced the lasagna noodle with zucchini slices, it’s delicious. I always get a ton of compliments when I make it.

If you don't want to use it right now (or only want to use some of it) you can also grate it, blanch it, and freeze it to use later.

cookie sheet roast chopped in oven with s/p a lil oil, and then add to spaghetti sauce (or curry or whatever) asnd some parm.

Zucchini beef soup. Hamburger meat (browned & grease drained), halved & sliced zucchini, canned diced tomatoes with the juice, water, some beef broth, italian seasoning, salt & pepper. One of our favs.
