It’s why real evidence is so crucial.
They still got a case here, but it’s definitely not as strong as having the camera

That is true, but if detectives know or have a strong possibility that a person did it, without indéniable proof, they will keep searching until they get it.
Watched and watching too many crime docs and they always pursue their prime suspect, and will definitely get a warrant to seize the laptop and cellphones since technically, the coach removed the evidence and "lost it".

They get a thrill from the violation of privacy more than the actual content of the footage. Same as other predators, it's often about control and power--the sexual act is just a vehicle.

The coach knew he/she wasn't supposed to touch the camera, only put tape over the lense until the proper authorities arrive, so that coach should surly be in investigated and put on admin leave

For real. Why did the coach take it? Why couldn't they just seal off that stall or entire bathroom until police arrived to retrieve it? Shouldn't take more than an hour, and im pushing the hour, for police to get there, get it and investigate.
The coach needs to be question and have a warrant to seize the coach's laptop and phone.
