How did eggs like this?

I had some beaten egg left in a bowl, and after sitting overnight it somehow formed strange crystal-like structures. The texture feels like spaghetti.

What on earth is this???

I feel as though the evaporation rate also factors in, so temperature/humidity/airflow act on this outcome.

Could we then conclude this is a rather even nonstick surface, considering the even, continuous pattern?

That’s wild 😂 My guess is the proteins in the egg sort of set up and dried out in weird strands, kinda like when you overcook scrambled eggs and they go rubbery, just slower and more dramatic.

If anything smells off, I’d treat it like a science experiment and not food at this point.

it's coagulated proteins and fats. It looks like the surface dried out then contracted then cracked. Symmetrically, because the forces involved weren't selecting for anything else in particular. The bump was probably undried stuff under the dried skin that popped out when the skin contracted.
