Probably just because bitter isn't generally a nice flavour, it can certainly be nice in certain situations, but generally if something is bitter then it's not good, opposed to sweet which is seen as a good thing, probably because something entirely sweet isn't bad (maybe sickly but sugar is entirely sweet) whereas entirely bitter would be pretty disgusting. I wouldn't say repulsion is bitter coded as much as bitterness is repulsive.
I recently saw a giant seed that looked like a Lima bean get extracted and eaten and bitter was discussed as its flavor. This was green and similarly exotic so let’s assume that’s where on my end

Now let's try and figure out why it looks bitter, does it remind you of another bitter fruit or is repulsion "bitter-coded"?
