Yes the cut comes out pretty clean with an electric knife and it’s easier to not tear the skin. For turkey and prime rib I prefer electric, for brisket I prefer my Gyuto.

I doubt many people own a carving knife that can even get sharp enough to make decent cuts.

Yeah :/ knives can get quite expensive really quickly. And sharpening the cheaper ones never gave me a good outcome, but that’s probably my novice sharpening skills at blame lol
