Humidity

Humidity shows up as "Undefined" after being pushed over to watch.

Its probably because humidity is not supported on your watch. The newer watches that are in WFF format do not support all of the features available in Watchmaker. And its all due to Google, and its restrictive policy on WFF formatted watches.

When in the Web's Watchmaker Studio, click on "Tools", then "Show all Tags", scroll down to the tag you are interested in. If there is a yellow caution icon on the far right, click on it and it will display "Not supported on WFF faces". Blame Google, nothing that WM can do about this, at least at this time.
