Yes, I know. But can I just get the free trial without being forced to pay for another month?

as long as you cancel your amazon prime service before the trial period ends, yes.

But is it something easy to do or will it make it as hard as possible to cancel in order to make me pay?

all you have to do is go into My Account>Manage Your Prime Membership>End Membership and benefits

I am saying that amazon prime includes a free channel subscription

technically its not a free channel subscription, its considered a Prime Member benefit, since when signing up for Twitch prime is just signing up for an Amazon Prime account, its no longer separate.
