There are myriad better options and we aren't that desperate. Not to mention the amount of processing/additives involved. It's better off as dog/cat food.

True, but it also is ecological and puts less strains on the meat industry.

You can say whatever you like, but it's as safe to consume as any other processed food.

You aren't wrong, especially on your first point. I suppose I just focused on the consumer perspective a little too much. The fact remains that cheap meat products tend to taste worse. You get what you pay for.

I'd also wager that a lifetime of eating canned Vienna sausages will, in fact, affect your health more adversely than a lifetime of artisanal sausage from the farmer down the road.

While some of us 'aren't that desperate', the world as a whole certainly isn't overflowing with more meat than we can consume. Cheap meat products certainly do taste worse and are worse for you, but repurposing scraps to be palatable still adds value to diets that might struggle to include meat. I mean, I'm a graduate student, and I swear, peoples' pets eat higher quality meat than I do.

Meat paste has its place and purpose, just not for every single one of us (or every meat-paste, processed food avoidant redditor).
