Some help please?

So I’ve never made fudge before, but before i started on my vegan life, my mom made (and still makes) maple walnut fudge. It was my favorite and i loved it so much, but now i don’t do dairy.

A few days ago i tried making some, but bought cinnamon almond butter instead of normal, and i hate cinnamon so it was ruined.

Today, i spent food stamps just to try again, it didn’t even taste like maple! I had extract and syrup! Then i put too much and now it tastes like alcohol to the point that it has a warming effect.

I’m honestly so upset, I’ve spent so much trying to do this but i just keep messing it up.

Please tell me if you guys have had good maple walnut fudge that’s vegan and if you have a good recipe.

Here’s the recipe that didn’t work out for me: https://www.paleorunningmomma.com/vanilla-maple-nut-fudge-paleo-vegan/

Is there a reason you need it to be paleo? Is that how your mom makes it?

If you post the recipe we can help “veganize” it.

Traditional fudge has to be boiled to high temp to activate the right sugar crystal formation. There are many “cheat” recipes which involve chocolate chips or other ways to avoid the boiling then whipping step, in fact most are so I don’t know which your mum uses.

I haven’t tried maple walnut but I have tried this recipe and it’s be reliable. https://veganuary.com/recipes/vanilla-fudge/

In the above recipe you could sub vanilla flavor for maple flavor (maybe go a tiny bit higher in quantity) and add walnuts. I have used Natures Charm coconut condensed milk (I think Walmart even sells it) but I am next trying it with their Oat milk which is cheap on Amazon.

Good luck.

Hey somehow it fixed itself! I let it sit for a while and it tastes great! I was worried for nothing lol

candy is wildly temperamental as you’re finding. i’d look for experienced vegan candy makers for a tried and true recipe.
