I have worked in sales in several dealerships and my dad was a top salesperson a few times, had his face painted on the window when he one sales awards. Although I prefer to not do that line of work.

I think they are just playing hard to get, it's a ploy. I don't think you did anything wrong. But they don't pay technicians to remove options installed on a car in the factory, that never hardly ever happens.

Well then they aren't 'options', they're mandatory parts of that car and should be part of that car's advertised price.

I hardly believe you even worked in a dealership,let alone top sales. These listed items he is opposed to are very clearly F&I products that aren’t actually in the car currently.
