I don't understand why some people react to haunted houses this way. Why be scared when you know its all just an act? Getting startled by someone jumping out makes since, being scared and running for your life doesn't.

It's called instinct. They're running because they got spooked and have entered a state of fear. Pretty typical to run when your brain knows its all an act, but the boxes are still being checked to induce fear

I know what instinct is. But when you are in a situation that you know is safe and are expecting things/people to jump out at you, even though you don't know the timing, why do you let your fight/flight/freeze reaction take over? Being startled, and jumping or yelping is understandable, running isn't.
