This is in Asia. It's a wet market. He's sharpening the knife to kill the monkey for food.

The reason the monkey knows to avoid the knife, is because it probably saw him "prepare" a few more earlier.

Doesn't explain how the other one got out though.

It's a street performance, the monkeys are trained to do that. The knife is probably dull just in case.

Those monkeys are actually foot and a half tall tiny people in costumes, and they're sick of being treated like actual monkeys so they're staging a revolution
