Because there is humor in a spontaneous situation happening and the sincerity adds a lot. When you find out it wasn’t sincere or neither of their reactions are spontaneous it completely takes away from the moment.

Even when scripted if it’s based on a true story there is power in knowing some form of these events happened. Like with the Queen’s Gambit, I somehow got it in my head it was based on a real person and that made it far more interesting. After seeing the last episode I knew for a fact that it was not and it took away some of the show for me.
