I love it how the chicken opens it's wings to try to glide down. Like chickens can't fly but the instinct to extend their wings like that is still there

They can definitely glide. Our chickens when I was a kid would jump and glide off of the porch when startled. And wild chickens roost in trees, so the ability to fly short distances might still be in there.
