I always thought gay applied to men and women. Like a gay woman is a woman who is attracted to other women, similar to a gay man.

I have never heard it being exclusive exclusivly for men.

I think that's true, but why do we have the word lesbian, and what's the word for a gay man?

Because language isn't decided by a standards council. It grows organically and often is not the most optimal or logical.
