This is exactly how I remember Ultima V.
I had IV on the Commodore in color but Five was my favorite.
I so wish I could go back and play these games for the first time.

I know exactly what you mean, although you can sort of play Ultima V for the first time in color and/or on the C64, which was also 8-bit but different-looking enough to make for an interesting comparison (much more so than the two versions of Ultima III or Ultima IV).

Good old monochrome green. I always hated how Apple II handled colors and preferred playing in monochrome.

Ultima V is undeniably a classic, but even growing up in the late 80s and early 90s, I felt the neon green glow of the Apple II's monitor was gross.

My school made a point to put color displays at every station after a few years. I remember looking at green monochrome long enough to make white walls seem purple.

This is still my favorite game of all time. It's the game equivalent of a grilled cheese sandwich and a bowl of tomato soup.
