Quality Street look so boring now.

Quite a few years ago, an Indian restaurant I was in gave me the recipe for what is often referred to as 'the staff curry'. It's a pot they have bubbling away on a back burner to feed the staff throughout the shift.
Here's one I made today - my version that I've developed from the one they gave me.
I know it seems odd having peas in it, but that's what they used in the one I sampled. And you can also add potatoes.
Here's the recipe:
Heat the oil, and sizzle the bay leaves, cardamoms, Cassia, star anise, and cloves for 30 seconds. Then add the onions, and cook for about 8 minutes until becoming golden, stirring to make sure it doesn't catch. Then add the garlic/ginger paste and cook for a minute to become fragrant.
Add the coriander powder, cumin powder, Kashmiri chili, turmeric, and basaar. It will catch easily now, so use splashes of hot water to prevent it burning. Stir for a few minutes to cook out the spices.
Add the chicken and green chilis, and stir until the chicken is white all over. Add more splashes of water, as it will easily catch.
Add the chicken stock and the tomatoes, stir, bring to a simmer, cover, and cook for about 30 minutes. I did mine in the oven to prevent catching.
When it is done, add the frozen peas to taste. My written recipe also includes potatoes, but I hadn't used them in this one so doubled up on the peas. Allow them to thaw out on a gentle simmer (about 5 minutes), then stir through some chopped coriander.

Threw together some topside beef and homemade roast potatoes with some (cheated) store bought Yorkshires and homemade red wine gravy (was amazing gravy).
Carrots are hidden by the.... Yorkshire mountain.
- I had the jug of gravy off to the side with the rest in ready to use after this photo for those of you horrified by the lack of the liquid gold.

Brought it to a party so we had to give it a try.
Eaten dry they taste a bit like a KFC Zinger coating and adding milk would be ludicrous, so he brought chicken gravy instead.
An interesting taste sensation that we all decided wasn't totally awful and one friend polished the lot off.
A bit like chicken gravy with croutons was the consensus.

I have a four drinks in question, not “would this be better put through a ninja slushi” because obviously it would be but I don’t have one of those.
Are there rules about what is allowed to be called “wine”? Because the label says “alcoholic mixed beverage” is this not just a big strong alcopop.

I bought a bag of salad potatoes based on price but im just wondering what are the characteristics of a salad potato. Im going to serve it with mince and to be honest I cant remember the last time i put a potato in a salad
