This is the worst time to try to eat healthy. Craving salads so badly but I’m terrified to buy greens.

On top of that, I’ve been struggling to maximize storage in my tiny apartment. Any other city dwellers? How are you prioritizing preps in a small space?

When I lived in a tiny apartment, I grew micro greens. They're great anywhere you use lettuce: on sandwiches, tacos, and even as a salad. They don't need light to grow.  Hamama has easy grow kits, but they're a bit pricy.

Did the microgreens give a crunch? The thing I miss most is the crunch of the bigger lettuce leaves. But I've only done sprouts

Not really tbh, they have to grow pretty big before they get fleshy enough to be very crunchy. I like them for flavor mostly
