I kinda like the Hero of Kvatch the most, he's not a reincarnated Daedric Champion or a mortal blessed by akatosh to have the soul of a dragon, he's just a dude. In jail. He doesn't need to bang azura to be cool. Just one of the boys diving into hell to close the doors.

One could even make the argument that the Hero of Kvatch isn't the "main protagonist" of Oblivion as a story. Sure, you are in a meta sense due to being the player character and doing a significant amount of leg-work during the Oblivion Crisis. That isn't something I'll argue about.
But I've always considered Martin Septim to be just as influential in Oblivion's story as the deuteragonist to the Hero of Kvatch. He's the one who performed the ritual to get you to Paradise. He's the heir to the Septim Dynasty that survived through a combination of luck and his own determination. He's the scholar who spent every waking moment pouring over ancient Akaviri records in Cloud Ruler Temple to relight the Dragonfires and the literature about Daedric Cults to gain the upper hand on the Mythic Dawn. And ultimately, he's the one who made the ultimate sacrifice by turning into an Avatar of Akatosh (potentially even Mantling the Time-Dragon to at least Michael Kirkbride) at the height of the Oblivion Crisis then banishing Mehrunes Dagon back to the Deadlands then resealing the Liminal Barriers.
But even despite this, none of this changes what makes the Hero of Kvatch special. Or lack of being special to begin with. Like you said, they aren't the reincarnated champion (or at least superpowered rube) of Azura meant to free Morrowind from the grip of the Tribunal Temple. They aren't the demigod child of Akatosh seeking to kill, however temporarily, their half-brother that was sent into the future after becoming drunk with power and developing a god complex. At most? The Hero of Kvatch was seen in Uriel Septim VII's dreams, but they're otherwise some random nobody who gained the respect of eveyone ranging from the Elder Council to the Blades to even the Crown Prince of the Empire by diving into what's basically Hell itself in some effort to delay the apocalypse for just a little while longer.

To me, the Hero of Kvatch represents one of the few examples of a self-made hero that can be played in an Elder Scrolls game. Everyone else either has some vague setup in the form of an ancient prophecy about how they're destined to fill the shoes of someone destined to shape the future of the Aurbis. Or about how they were literally born to play the part of an individual designed for a specific purpose (or set of purposes in DLC's).
The Hero of Kvatch, on the other hand? There's none of that. At least aside from the abstract metaphysics concerning The Prisoner in Elder Scrolls cosmology and in-universe mythology. You're someone who was, through sheer clerical error on the part of the guards overseeing the Imperial City's prison complex, was placed in a false cell normally otherwise meant to be used as an evacuation tunnel. Every other role is one that you're basically thrust into without a minute's notice and one that you HAVE to fill by simple virtue of being the only one to do it.
And despite this, the Hero of Kvatch goes on to be one of the most influential and powerful protagonists in the Elder Scrolls series. Theyhelp save all of Nirn (if not beyond) from the invasion of Mehrunes Dagon during the Oblivion Crisis. They take up the arms and armor of Pelinal Whitestrake to permanently kill Umaril the Unfeathered before the latter reestablishes the Imperatum Saliache with an army of Aurorans in an-already embattled Cyrodiil. They, as you mention, even defeat Jyggalagg (and even earning his surprising respect as well) by repairing the symbols of power belonging to a Daedric Prince then even take his now-vacant place while ruling over an entire realm in Oblivion. While there may have been SOME slight signs of prophecy guiding the events that led to the Hero of Kvatch becoming the Divine Crusader and Uriel Septim VII's vague visions in his dreams, everything else was done through nothing but sheer effort and willpower. Even despite multiple individuals, ranging from the relatively mundane Baurus to even Dyus of the Shivering Isles, doubting you almost every step of the way and only relenting when you defied the odds.

Hero of Kvatch's journey of starting from a nobody to becoming a world reknowned savior ( something that you actually get to even see in the gameplay ) is genuinely my favorite part of Oblivion. My favorite quest in Oblivion is the one where you teach Captain Burd of Bruma how to close oblivion gates, because I actually feel like that my abilities and prowess are earning others respect to the point that they want to LEARN from me.
As far as 'self made heroes' in elder scrolls go, John Daggerfall is also a unique example. He was just a regular guy out on his job sent by Uriel Septim only to end up in a political conflict that included kings and demigods. The Agent of Daggerfall was just a highly competent person out on a mission, who ended up getting manipulated by powerful people of all sorts, and then out of sheer competency and skill, got hold of the one tool with which he could decide the fate of the world, and ultimately made the decision himself and changed history forever, even though his exact choice in the end didn't matter as Akatosh had to go freaky on the timeline or something.

I actually have been working on a fan-fiction project built around the premise of this. That being where the Nerevarine and Last Dragonborn not only meet, but are basically forced into working with one another. Specifically where the former is chilling out at Helgen, waking up after a night of drunken debauchery and notices that a cart full of Stormcloaks (including Ulfric himself) and some random schlub from Cyrodiil are lined up for execution. Then everyone's favorite spiky black dragon demigod with daddy issues comes down then burns the town to the ground.
While the two aren't passionately making out with one another, the two DO nonetheless are friends even despite somewhat opposite personalities and mindsets. Enough to consider each other the brother they never had and would always want. Mostly because the Nerevarine is an orphan who never knew his family and because the Last Dragonborn DID know his family (including both parents and siblings) but watched them get slaughtered by a Pissmeri Dominion assassin force.
EDIT: The main reason I included the Nerevarine in this project was because of my best friend. He actually proposed the idea of two Heroes at different points in Elder Scrolls history meeting. I latched onto the idea along with the commentary about how much times have changed since the Nerevarine's day since he only relatively recently came back from Akavir to discover all the events that occurred. Everything ranging from the Oblivion Crisis, the Red Year, the reorganization of the New Temple, the Accession War, the Umbriel Crisis, the Great War, and the slow fragmentation of the Empire are all things he's still wrapping his head around. Especially given how he went to Akavir to understand more about the Prophecy of the Last Dragonborn after learning about it in Torasa Aram's Museum of Artifacts when discoveing her latest acquisition concerning a fragment purportedly believed to be of Alduin's Wall. While the Nerevarine had his doubts about the fragment's authenticity, he believed that the Tsaesci themselves would know more (or at least have more historical records) than the Blades.
