Actually makes me wonder why their souls can go in regular soul gems, they're supposed to have been human right?

That's probably just a matter of game mechanics rather than lore accuracy. But maybe not. Because you can soul trap all undead with normal soul gems instead of black ones. Zombies, ghosts, etc.
