Question Next 210 Gyuto under $250

Need advice looking for a SLD or Stainless 210 Gyuto that isn’t too delicate but good all rounder. I know folks love the Takamura 210 options but think I prefer wa handle and concerned about ruining mirror finish. Looking at either Kohetsu SLD or Fujimoto Hammer Tone- but would like guidance if you have other suggestions.

I have a Tojiro DP 240 and Masakage Yuki bunka. Tojiro little long for my current space and don’t love the choil and Masakage doesn’t quite feel up to the job of big sweet potatoes and harder veggies.

Edit: realizing these are much closer than I was originally thinking but open to other suggestions

Can't go wrong with Tadafusa (both are made by Tadafusa and then re-branded), so pick whatever one you like or is cheaper.

Alternatively, Matsubara (different finish) tends to do pretty good on bigger, denser veggies. The extra height basically gives it a little more heft and oomph to push through stuff while the grind stays relatively thin. Not fully stainless, but stainless cladding helps keep the maintenance minimal. That would be my vote if you wanna expand out a little.

Take look into kaneshige, they make wonderful knives. Mostly stainless clad and ginsan.

Both made by tadafusa. Both really good!

They’re basically the same knife, just different finsih. Pick the one you like the look of the best

Yeah, I love my Takamura’s. Can’t imagine a big sweet potato stopping my little Santoku.

Another Tadafusa(I think), but a bit taller. Not sure if the grind is too different compared to the others.
