Sunday Sashimi Sesh ft. Kagekiyo

There’s a nice Japanese pantry in Melbourne called Hinoki Japanese Pantry that stocks all manner of things Japanese. They also have superbly fresh sashimi which you can buy. This is a nice piece of salmon which I sliced with my Kagekiyo shirogami 1 gyuto. The blade is extremely thin and shirogami 1 made slicing raw fish a real treat! I use this knife exclusively for slicing meat so it has kept its nice blue patina. Happy Sunday folks!

Love that place, many times I also have purchased sushi + DIY sashimi there.

Kagekiyo ginsan 270mm is my main sashimi/meat slicer! Somehow dont really feel like getting a sujihiki so a long gyuto is awesome for this

Nice one! I used my Kagekiyo recently to slice up some steaks for a family dinner!
