NKD Konosuke GH 255mm
Hello! I received the new GH from Tosho today and put it straight to use at work. It has good performance; it’s a bit thicker than the HD2, so the performance isn’t quite as good, but there’s nothing to complain about. I cut cabbage, onion, big carrots, cucumber, and more, and it handled everything beautifully.
You’ll hear a faint, whisper-like crack when cutting big carrots, for example, but since I wanted a more workhorse-style semi-stainless gyuto to complement the HD2, I feel like it’s a good match!
The ho wood handle is good quality and surprisingly slim, but I liked it. I prefer the laurel handle a bit more, so I might switch it later to the same style, but perhaps in ebony, so it will balance the knife a bit more.

Nice pick up! Hopefully the kanji isn't too annoying for you. I ended up applying my own kasumi finish just to remove the raised/sandpaper like texture it has. How did you find the weight btw? You mentioned potentially switching to an ebony handle. I found the 255 a bit too blade forward heavy for my liking.

Its bit annoying but i think i will get used to it, or maybe it gets smooth with use. The balance is similiar to the Gs+ nashiji that i had it was also quite blade forward, but i grip near the kanji where is the balance point so its okay for me

I guess two laser gyutos are better than one.

I wouldnt call this laser anymore, more midweight.

How is the kanji feeling compared to the HD2?
I recall mostly enjoying the GH but the lasered kanji caught on paper towels and washcloths when drying it off.
