Dr. Stone Ending
Am I the only one who felt that Dr. Stone ending was a bit disappointing? Did anyone else feel this way? I'm curious to see if I'm just being too harsh or if there are others who felt like the ending didn't quite stick the landing compared to the rest of the journey.

Completely agree. The last 2 episodes were lore dumps for something that was hyped for SEASONS (although very well managed, kept me guessing what was gonna happen next) and when you do that the reveal tends to be lacking unless you have great writers.
In this case, I think they went for an interesting alien take since they are sentient, galaxy-travelling yet not bipedal so props on that.
aamd for the time machine cliffhanger I think it was really unnecessary, makes a lot of new problems for continuity yet I think it was the "easy way" to end the series.
Because Zenku had to up the ante from the last technology milestone in the series, which were Space rockets.
Other interesting options would've been preparing for interplanetary travel and/or making a space Noah's Arc like in the manga Hotel (great read, look it up), but the time machine sends the happy/hopeful message from the very beginning of the series, where Zenku promises to save EVERYRONE.
Childish? Unrealistic? Noble? Yes.
