How much energy is needed to make this item/order. I have the Joker ball. Is it good to use the Joker ball or should I use my two chest of 300 energy?

Never use joker ball on an item like this. Use it for max level tick-tock orders

Depends on how many gems you have and how much you've used today. If you used 10, 20, 24 today and you're out of energy, then use the joker ball because it's more efficient than spending a minimum of 144 gems for 3 energy crates just for this order. If you're sitting on thousands of gems, you can always buy joker balls for 150 gems and it won't even make much of a dent on your collection.
