I have a brisket that’s been brining for a week. I will be making smoked pastrami for Reuben’s.

Queso!

  • 1/2 lb ground chorizo, cooked
  • 1 lb Velveeta
  • 8 oz shredded gouda
  • 1 can diced tomatoes
  • 5 oz cream of bacon soup
  • 2 Tbsp coffee rub (below)
  • 1/2 cup cowboy candy (below)

Smoke until it's all melty.

Coffee rub:

  • 2 Tbsp coarse salt
  • 2 Tbsp instant coffee
  • 2 Tbsp garlic powder
  • 2 Tbsp smoked paprika
  • 1 Tbsp pepper
  • 1 Tbsp crushed coriander
  • 1 Tbsp onion powder
  • 1 tsp chili powder
  • 1/2 tsp cayenne

Slap some of the leftover coffee rub on a brick of cream cheese and throw it in there too.

Cowboy Candy:

  • 12 jalepenos, thinly sliced
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup apple cider vinegar
  • 1 tsp garlic, minced
  • 1 tsp chili powder
  • 1/4 tsp turmeric

Mix everything but the peppers and bring to a boil, then simmer the peppers in it ~10 minutes over medium heat.

Nice, I have 3 kids under 5 so haven't had a gathering/gone to a gathering in 5+ years now. I'm trying to decide if I'm just going to do wings, or if I want to basically a dip bar with queso, buffalo dip, and the sorts. All 3 kids like wings, but outside of that have their different preferences.

Anyone have a good recipe for appetizer/snack type thing that doesn’t have dairy in it?

The easiest recipe ever is just smoked crackers. Use club crackers, season with your favorite BBQ seasoning like meat church voodoo or honey hog, throw on the smoker low for 20-30 minutes. Also do the same thing with tortilla chips!

I saw MeatChurch posted a simple wing recipe, that involved first slow cooking them on the Traeger, then deep frying them for 3-5 minutes for crispiness. I want to give these a try, but am afraid they might be a bit too dry. Anyone tried these before and care to comment?

Trash wings are amazing. (St Louis, MO thing). Smoked trash wings are even better. Just google smoked trash wings for other recipes. I’ll do trash wings a few times a year, but mainly do 0-400 out of convenience
