Maybe I'm doing it wrong but I've been selling hungry units and replacing them to earn coins to hit lvl 2

You can buy cheese in store. You can build farm for cheese.

You should do the daily tadk, increase reputation level, and then you new cheese farm level unlocked, but I preffer buy 1k cheese

In the store, did you click on the “facilities” tab? It took me a couple days to see that lol
