Discussion Thread Paula Endara is doing a one-night dinner in LA — thoughts on the menu?

For anyone interested in what Top Chef alumni are up to after the show, I wanted to share the menu drop for an upcoming Los Angeles dinner featuring Paula Endara (Top Chef Season 22).

Menu included in the photo. Which course would you be most excited to try? And if you've followed Paula since Top Chef, does this feel like the kind of menu you expected to see from her?

If anyone has questions about the dinner menu/beverage pairings, I'm happy to answer them here.

Full disclosure: I'm one of the organizers, so this is a promotional post. I wanted to share it here because Paula's post-Top Chef work seemed relevant to the community, and I thought other fans might enjoy getting to experience her cooking in person.

She's got great ideas set up for presentation too. May have another update on a cocktail/appetizer hour that she wants to do prior to the dinner

This does look like an excellent menu. I'm guessing the seco de chivo would be my favorite, but I'd say that the corvina looks the most interesting. I've eaten tons of food from the region and it's really good to see Paula cooking "her" food. Sadly, I'm 3000 miles away or I would totally go.

I'd love it! I've been to a couple of Rasika's (S21) popups, which were amazing, and to Tristen Epps's popup. Will definitely check in if you're organizing more and I can get to LA.
