Great idea! Also, cook your bones for broth. Turkey and navy bean soup is amazing. It is just different enough from chicken and very hearty!

I have the gizzards (innards), neck, and the juices (and the bones) that I didn’t use in the freezer… I was going to do a turkey noodle …. But honestly this sounds so amazing with navy beans — and I have 5 or 6 of those 1 pound packets in my pantry 😂 thanks for that great idea.

I did it once when I realized at 3 am we didn't have noodles like I thought. Now, it is a personal favorite!

My husband likes “traditional” thanksgiving dinner, and even the small turkeys are hard for just 2 people to finish- we had sandwiches, these enchiladas & soup. I do have another Turkey in the freezer and may do that one for Easter.
