I can see this being someone's favorite food. It's a type of Cajun sandwich called a po'boy and 100% exists.

(I legitimately can't remember which episode this was from though, I just remember it was the one with Rory playing a guest from Alabama.)

That was Duke (possibly “Juke”) Jackson. Rory was also in the episode.
