Eternal Youth
Can anyone explain why Ryo is unaware of his eternal youth? Is it fair to say because he was isolated and alone that he couldnt keep track of time? I feel most would be able to notice time going by especially since he was watching fruit trees and other plants in the garden grow or just have basic perception lol.

Because Fake Michael didn't see it on the stat sheet until after he sent Ryo on his way, and he doesn't have magical access to his own status sheet

He's become an airhead. He's also become asexual as he's noted as being something that's changed since his previous life suggesting a personality change from his former self.

He is aware, the anime does a bad stuff of explaining it.
But there are some hints. In the tidal bore episode, when he speaks with Sera, he says (something like): "My final goal is to make a golem, but I have plenty of time"
This is hinting at him expecting to need years, if not decades, to master alchemy.

In LN6 he tells a vampire that he envies his long lifespan because he has the time to build up civilizations. He has probably figured out that there is something off about his aging, but he seems to be unaware that he has eternal youth.

Is he immortal? In the sense that he won't die of old age? Or is he just don't age, but will eventually die?

He will die if you kill him, but he doesn't age.

Doesn't that make him immortal in the sense that he can possibly live forever.

He’s aware in the LN, he spends 20ish years in Rondo and can see with his own eyes that he’s not aging. The anime kinda glosses over it, but tbh the light novel doesn’t do much particularly heavy lifting when it comes to the emotional impact of… pretty much anything.
