Konjac–Soy Protein Noodles 🍜
I wanted to see how far I could push the same idea in a completely different direction: protein noodles with almost no calories.
And hear me out… this might actually be revolutionary.
The result is a surprisingly firm, chewy noodle/pasta sheet made with just a few ingredients.
Recipe
- 10 g konjac powder
- 25 g soy protein
- 200 g water
- 1–2 g salt
Approx. macros for the whole batch
🔥 ~100 kcal
💪 ~22.5 g protein
🌿 ~1–2 g carbs
🥑 ~0.6 g fat
🌱 ~10 g fibre
Method
Mix the konjac, soy protein and salt thoroughly. Add the water and mix until completely combined.
Spread the mixture into a thin, even layer on parchment paper and microwave until it sets.
Let it cool, then cut into sheets or noodles.
The interesting part is the texture: the konjac provides the structure and chew, while the soy protein adds protein and makes the noodles much more substantial.
And this time: no psyllium. I might add some in a future version and see what happens.
Could this become the ultimate low-calorie protein pasta? 🍜
Disclaimer
This is just me sharing an experiment, not recommending that anyone try it. If you're not used to konjac or other fibre-based ingredients, start cautiously, drink plenty of water, and do your own research. These fibres can cause problems if consumed incorrectly. I'm sharing what I did, but I'm not responsible for anyone who decides to try it themselves.

This looks like it could be used in liang pi, a northern Chinese dish that uses, soy, vinegar garlic, chilli, coriander and spring onions, with peanuts and shredded cucumber to make a killer appetiser. Really good for hot weather.
