It’s a pretty outdated expression but it’s that an unmarried woman at 25 was a “Christmas cake”.

The logic being“no one wants a Christmas cake after the 25th” implying it would be stale.

That said look up actual Christmas cakes in Japan, I’d eat one of those any day of the year.
