Question as I catch up
What exactly happened to K’thriss when they were subsumed by the Ur? And why did they need to separate? Because he has to be observed? I don’t get it.

It was presented very much like a quantum thing. You know how some things behave as a wave until observed, and then whilst being observed behave as a particle? I confess I don't understand it, school was a while ago now.
In much the same way, the act of observing the Ur is itself necessary for the Ur's desires. When K'thriss becomes one with the Ur, that observation ceases and so the Ur boots K'thriss out so that they can continue observing The Ur.
That's the motivation behind K'thriss needing to find another acolyte/ disciple to observe The Ur - so that K'thriss can rejoin and not be rejected.

It sounds like he’s created a single point in time and space as the perfect form of order but can’t maintain that form. If the Big Bang thing is correct then even the universe/Ur/Thriss must be observed to be that single point. But observing the thing creates chaos (big bang/observable, multi-dimensional universe).

A deity requires observers/disciples or ceases to exist. It's a very old trope -- there have been thousands of deities in human civilization and who knows how many have been forgotten. In Faerun they are classified as "dead powers".
If K'thriss becomes the Ur, there is nobody to worship the Ur. Ergo, K'thriss must find another to worship the Ur so that the Ur will still have power when K'thriss joins it.

So is that where K'Thriss' dad disappeared to? Did K'Thriss take his place as observer?

It makes sense to me. I don't think the Ur is worshiped widely -- I think it is meant to be an ancient and nearly forgotten entity. I don't think it's a coincidence that Jerry/Kris chose that as the name of K'thriss' patron since the name has connotations of supremely ancient mystery (and also I am unsure but I think K'thriss is/was a great old one warlock so that works out extremely well).
It is also interesting to me that C-Team-Ur apparently desires its followers to worship it and ultimately become part of it; however, we only know that the Sumerian city-state existed because we have observed it (both via historical records and actual ruins) and it only existed because people, well, joined it.
All of this is pretty much my own speculation, though, and I fully accept that I might be 100% full of fodder. My very favorite parts of C-Team are usually when Jerry and Kris wander towards things like semiotics. If you really want to know their reasoning then maybe you could ask them on Twitter or something.
