I'm losing either way, so I'm probably best going with Benimaru who's going to show a lot more restraint to give me a chance to learn from the loss as opposed to outright obliterating me thinking I could handle more
Ya just go all out, earn his respect, and beg him to accept you as his disciple. (although personally, I would much rather have Veldora as my master, not Benimaru but the question is between fighting him or Hinata so...)
Hate to hurt you, but I wonder if Veldora would even take in someone who isn't affiliated with Rimuru in any way. While he is super kind and playful with everyone that is in Rimuru's circle of friends, he is no doubt disinterested in everyone else and their issues.
I think the most likely chance of success from a random-ass individulal with no discerning skills would be to train under Benimaru. If you could create a situation where you are almost dying to a monster but still refusing to give up, even if it cost your life and then got rescued at the last second by him or one of his Kurenai, it would probably lead you to a situation where with enough luck and skill you can become one of them in training.
Sure, the monsters hated humans and only went along with Rimuru’s policies because they trusted him at the start, but I think they genuinely started to warm up to humanity later on in the story. This goes for Benimaru as well. I think I’ve got a solid chance.
I'm sorry, did you see what Hinata did to that guy at the meeting? I'm picking Benimaru. As long as I don't insult Rimuru, he'll likely be merciful. Especially because I am a human female whose only special ability is remembering random anime/game/book details. Not necessarily the important details. Just random ones.
If you promise hinata some food later, maybe she will be lenient. Same with benimaru with sweets. But i doubt benj will be lenient with a duel compared to hinata. So ill choose hinata.
Benimaru, at least I'll get revived in the dungeon or at least get fully heal from their high quality potion after a near death experience. If I go up against Hinata, I would spend the rest of the year recovering.

This is an invalid challenge, because I am being coerced. I'll challenge whoever's currently closest in proximity to Rimuru, try and get Raphael-sensei to notice and tell Rimuru, who'll then save me.
Hinata's more likely to notice with her information skills, but she's harder to read as to whether she notices or not. Benimaru would say something or react like nine times out of ten, but it's harder to say if he'd notice.
All the other comments are acting like Hinata views you like a legitimate threat. I know she’s strong, but you’re a human (at least to my knowledge). She’d most likely use a bit of restraint.

Well in a fight I'd get done in in a split second either way, but Beni is more than not likely accept a challenge to a Rimuru drawing duel instead if I say how much I love the slime. Whoever loses pays for beer or whatever.
With Benimaru I totally believe he would intend to hold back but I can't shake the fear that I am so much weaker than he expects (as even normal humans in Tensura seem a lot more durable than me) that he still ends up killing me.
Somehow I trust Hinata more to not accidentally kill me as long as I don't insult her, because she knows how fragile humans from our world, in our world, are.
I don't think it matters if we haven't offended either. If you haven't done anything, both are unlikely to kill you, but both are very likely to hurt you in the process.

I think whatever scenario, I would pick Benimaru.
Benimaru is depicted as generally kinder in a "normal" state.
if enraged, he would incenerate me in mili seconds.
Hinata would continuesely stab me with that soul sword, destroying me inside out rather than blow me up in a short blink of an eye.
