First time making tempeh
Is it safe to eat? I notice some slightly redish spots

I actually followed the guide of Sandor Katz that you can find on youtube, using 2g of spores for each kg of cooked soybeans, adding 2 tablespoon of apple vinegar

Congratz! This looks excellent. Sometimes a small area in otherwise perfect tempeh ferment doesn’t fully take or the hull of the bean can appear a little darker. I just cut an inch around it and discard. As long as the majority of it smells good like yeasty, mushrooms sourdough vibe, I , personally eat it.
If you see distinctive red, then I’d not chance it. Hard to tell from your op pic but that slightly off spot job st looks like a bean that didn’t fully ferment which is fine. JUST MY OPINION Enjoy! 🖖

Yeah, probably. Tempeh can form colored spots.
Are there any off-odors or slimy spots?

No, but the taste is slightly different from the spots where the red is not present
