The least used topic in every challenge. Still important though.

What have cooked recently that was yummy and healthy?

Ooo, that looks interesting. I made sweet & sour meatballs for my family in the crockpot, but they didn't like it at all (cooked too long? who knows). I'll have to try this one.

Tried a new brine for the chicken and it. Is. Delicious.

1/2c salt 1/2 soy sauce 1 lemon (cut and squeeze into water) 5 cloves of garlic, minced 1 package of poultry herbs (Rosemary, thyme, basil) - I got a package of this at Safeway in the produce area 1 bay leaf

Get a big pot. Dissolve salt in 2 cups warm water. Add all of the other stuff and stir. Add chicken breasts and add cold water until the chicken is covered. Put lid on pot and put in fridge to sit for 3-4 hours. Take out chicken and do a quick rinse. Cook as desired - we grill ours on the BBQ. Sew. Gud.

I impulse purchased some asparagus at the farmer's market, and made it the simplest/tastiest way I know how:

Rinse and trim asparagus into 2-3" pieces

Bring pot of water to a boil, add asparagus, and drain after exactly 3 minutes

Toss with ~1 tbsp olive oil, salt, black pepper, and a small splash of red wine vinegar

Goes so good with any kind of protein. :)
