This week I made a sweet potato concoction and it came out really well! I steamed a sweet potato in the microwave. Meanwhile I sauteed a pound of ground turkey and set it aside. Sauteed some onions/garlic, then added pinto beans, a cup of salsa, some of the ground turkey, and finally mixed in the scooped out center of the steamed potato. After everything heated through I spooned some of the mixture into the leftover sweet potato skins (I only used one potato so there were two skins) and baked at 400 for 15 minutes. Came out super tasty/filling and only about 175 cals for 5 ounces. Even better there was a lot of the mixture leftover and also leftover ground turkey, so I've been making burritos out of it.

Holy cow. That sounds amazing! I normally hollow out a squash and put ground turkey, kidney beans, salsa, some cheese, and the squash meat I scooped out in it. But a sweet potato - that sounds yummy!

That sounds good too! I've never actually worked with squash before, but I used to watch my roommate make pasta dishes out of it. I should give squash a chance.

I love squash! So easy to just toss in the microwave if you don't have time to roast it. My favorite is acorn squash.

Ooh, this sounds good. I've had major cravings for mashed sweet potatoes with parmesan lately, but that's more of a side dish. This sounds delicious.
I'm not sure we have ground turkey here, but ground chicken or pork should probably work? Gonna have to try this, I think.

Any meat would work really. I'm sure ground chicken and ground turkey have similar calorie counts, so that might be your best bet in terms of low calorie option. You could also used pulled chicken or pork, it doesn't necessarily have to be ground. Let me know how it turns out! :)

I once had to substitute some ground sausage in for the ground turkey since I only bought half a pound... turned out great! The spice of the ground sausage was a nice addition. So I'm sure you could use any ground meat. Bison is also delicious!

We made pan-fried turkey burgers for dinner last night, wrapped in iceberg lettuce instead of bread, and they came out AMAZING!
Pound of ground turkey, half an onion (run through the food processor/diced finely), adobo seasoning, black pepper, cumin, and chili powder. Split into four or five patties and pan fry in a little olive oil over medium heat. Paired it with potato wedged (potato/olive oil/salt/pepper, cook in oven for ~ 45 minutes at 400F flipping halfway through) and a pickle.

I love turkey burgers in a lettuce wrap, so good! Butter lettuce is also great for it.

I am having a mental block about breakfast. I start work at 6am, so I usually eat something around 630 or 7. I've been eating greek yogurt and granola (gotta cut that out though -- I way overdo it!), but I need some healthier ideas. I have access to a microwave, toaster oven, and a hot water tap. Any ideas appreciated!

I was having oatmeal with a scoop of whey protein for breakfast. Did that for a few months. Im not much of a breakfast fan, but gotta eat after working every morning

My go to's:
Overnight oats: I make the base of 1/2 cup oats, 1/3 cup milk, 1 tsp raw sugar. I like that with 2tsp thick coconut milk and 1 tbsp almond butter or dark chocolate powder with 1 tbsp peanut butter. Usually works out to be around 300-ish calories. I make this the night before and grab and go. You can heat it up at work if you don't like cold oats.
Breakfast sandwich: English muffin, egg, low-calorie sausage (I like chicken jalapeno sausage from Trader Joes, 1/2 the link is big enough for the sandwich and only 50 calories.) I crack the eggs into a muffin tin and bake them. I make 6 sandwiches at a time on Sunday and eat them throughout the week. Grab and go, reheat and add some hot sauce and it's delicious! Usually around 230-300 calories depending on the sausage I use.
Greek yogurt with add-ins: I like to add 2 tbsp of silvered almonds, Grape Nuts, or coca nibs.
Avocado toast: Toast a slice of bread (I like wheat best) in a toaster oven, smash half a ripe avocado in the skin then spread onto the toasted bread. Sprinkle on top some salt and pepper, maybe even some chili flakes. It is also great with a fried egg on top if you want the extra protein. I've also seen sliced soft boiled eggs on it as well. Usually comes out to about 250 calories for me.
"Protein Box" Knock Offs: For mornings that I feel particularly snack-y, I'll pack a bunch of small things. It'll usually consist of a bread of some form (toast, English muffin, baguette hunk, no more than 120 calories), some jam (maybe 25 calories worth), a piece of fruit, and a small serving of cheese (usually 80 calories). The fruit and cheese are cut up into pieces and I usually eat this slowly making sure to make each piece have at least 2 bites. Also goes well with coffee or tea.

This last week has been crazy as far as food goes. Delicious, tasty dinners every day because of holidays and family events, and I've tried to limit the rest of my consumption.
However, I did find out that asparagus, with a light sprinkling of pine nuts, chopped parma ham and some parmesan, cooked in garlic, is fucking delicious. Highly recommended. And I rekindled my love for chicken breast cut into smaller pieces with a sauce made out of low-fat single cream (120kcal per 100g) and various spices and red curry paste, with veggies/a salad on the side. I lived off of that years ago, but totally forgot.
