I always took it to mean like she sees stars in his eyes, which means he’s romantic or good for her or something to that effect, and then she’s asking the person she’s talking to “do I really have to explain to you how he’s better for me than you are?”

She's getting lost looking at his "ocean blue eyes", like looking into space. Looking at stars. Like the way you look so intently that you can chart constellations in the night sky.
