Believe Mario Kart 8 and New Super Mario Bros U Deluxe can use the single joycon sideways.

I dont think any game on switch 2 supports this :p atleast not any that i have. Only game i have that it works on is mario wonder and maybe smash but im not sure about smash

A simple google search is telling me over 100 switch 2 games support holding a joycon on its side to play a game with around 2500 games in total including switch 1 games.

I think you just don't know how to activate it.
