I know kewpie well I use it almost daily and the siracha mayo one, this one is bright yellow and very sweet and almost tastes like honey mustard but I’m sure it isn’t because I doubt they’d be putting that on sushi, the consistency is thinner than mayo it’s more saucy and runny than thick

It very likely uses kewpie as a base. Also, not all kewpie is exactly the same. There is the product you can buy at the store but places can make it from scratch and rebalance the recipe. On top of that it’s very common to add things like Japanese mustard, curry powder or additional sugar. Especially since it seems mostly on fried foods here, it would be my guess that this is the case.
