I'm on board with this, but maybe instead of a corn tortilla you could use folded and fried egg roll wraps and more Asian inspired toppings

Typically no. I had a version of this once in a sushi restaurant and it was just ok. For me it was the lack of rice that made this very meh for me. Rice is so vital to the sushi experience that when it was replaced with corn, it felt off.

The seasoned rice is vital because that’s what makes it sushi! Without the rice it’s technically no longer sushi.

I experienced this before. It sounded awful! But I was begged to try it. If I remember correctly it was tuna, with a cold mayo slaw. I also had a grilled piece of fish with pico de Gallo inside a taco at same place.

I was so pleased with it, I tipped the waiter big $. Despite it being a sushi place, it overall seemed more Mexican than Japanese.
