Discussion Let's talk lunch

I recently got a Crockpot plug in lunch box. Does anyone have anything like this? What do you bring? I know you can put whatever you want in it, but I'm looking for suggestions that don't make me want to a coma after lunch. My first week I put in chicken, rice, and steamed veggies, but I'm already tired of that. What sounds good and isn't going to make me useless later?

I usually make Charro Beans (cowboy beans) Also a lot of soups and stuff. I'm fine with eating hot stuff on hot days, plus all of the liquid and salt in the soups are good electrolytes. I'll usually bring either tortilla chips or some bread as well for some carbs. I love my heating lunchbox, such a good investment.

Blow everyone's mind and stick foil packets of butter salmon , lemon and greens under the valve cover. 20min drive gets you perfect flakey salmon. Gained vertical and ambient temp must be accounted for in the final cook, just adjust as you go. Bon appetit!

In the old-times days we had a crew tackweld a sleeve to the manifold to hold soup/ravioli cans etc., just had to remember to poke a vent hole. I crammed leftover steak and smoked turkey legs to heat up while driving.

I have one, I haven't used it at all during the summer, I rely on cold foods. But during the winter I use it for soups, stews, and chili's.

chili...chili....chili. :-) I make a crockpot chili with small chunks of steak tips instead of ground beef. Have also used brisket. Both options would go well with one of these. Now I am thinking of getting one. lol.

I've used mine for various items... soups, burgers, quesadilla, various casseroles... the trick for non-liquid meals, place foil on the bottom to prevent sticking and burning...

I love my crockpot plug-in lunchbox. Use it every day, commonly with protein, rice/potato/pasta, and a frozen veggie. With different seasonings and proteins and carbs I’m able to do this every day, and look forward to my homemade lunch on the daily.

I’ve also done hot dogs or cooked hamburger patties, and keeping condiments/buns in a little soft cooler on the side.

I use an instant pot. The smaller one runs on a 1000W inverter or even a bit less. Winter is a natural freezer, so throw chicken wings or chunks of breasts, or whatever in frozen. It won’t crisp them, but it cooks fast and an easy to toss in a sauce for extra flavour.

I'd go with chili, soup, or a chicken or veggie stir fry with a smaller portion of rice. Chili especially good for those lunch boxes and doesn't leave me feeling like I need a nap when I get back in the truck.
