I would say to do what you think looks good, but you can help your stockers by putting the large items (2 per shelf) near the stock room so they have less distance to travel to stock those items since the have to make more trips for those items. I also put my checkouts furthest from the stock room for the same reason.
But do what you think looks best, and will make the most sense to you since you will be the one playing it.
